Leftover salad

Got just a few leftover, cut up vegetables? Put them in your blender, add some liquid if needed (tomato sauce, grapefruit juice, etc., whatever is appropriate) and make a cold soup or vegetable drink.

Or cook them (even lettuce!) and puree for soup stock. If you don't want to use it at that moment, you can freeze it for for later.

I did something like this the other day. We made veggie sushi at home and had a lot of leftover fixins. I froze the rice to use later and tossed the veggie bits into a bowl in the fridge. The next day I added them into a bowl with some tomato juice (left by a recent guest), some garlic, and some cilantro. It made a really awesome gazpacho soup.

The way I see it, leftovers are meals with less prep work to do.
