Use your clean finger to gather up the remains of butter from the dish before you wash it or from the butter wrapper before you throw it away. Put the salvaged butter in a container with a lid in the refrigerator. Try it; you'll be surprised at how fast it accumulates.

Or put the butter papers into the fridge and use them when you need to grease a pan. Keeps the fingers clean, and it's really rather convenient.
That works, too. I don't grease as many pans as I use sticks of butter, though, so I only keep one or two wrappers on hand. Then there's still the container. It's surprising how much is left after it's been scraped "clean" with a knife.
