Save potatoes

When you have potatoes that are not keeping well, save them by partially cooking and then freezing. This works especially well with fries. Cut and bake on a cookie sheet at 400 degrees for about half the cooking time it takes. Or boil, mash and season, then freeze in meal size portions.

We grow our own potatoes. To keep the potatoes from getting soft (just before spring), when they start to sprout, we check every 2-3 days and remove any visible sprouts. This keeps the potatoes firm. We see a big difference if we let them sprout--they do get soft, and spoil easy then.
